To Store Wine

Wine is a personalized matter. Different people favour their own personal taste of wine. It is the same rule with the age of the wine. Some like older wines and some enjoy drinking younger wines. That is why it is a good thing to have wines that is produced to drink after a few months of harvest. Meanwhile other wines like “vins de garde” or so called aged wine are meant to be stored or aged in a good cellar for many years.
Wines are individuals and cannot be treated equally. They are meant to be treated and developed with different cares and dedication. White, red, rosé, sweet or Champagne has different functions of treatment. It depends on were they come from, what kind of grape and the year of the wine has important significant in aging rules. All aging wines cannot be aged for endless of time. Different wines have different time periods of aging and have to be drunk when it reaches its peak.
Some white wines can gain in aging it for a few years before drinking. The yellow colour of the wine transforms into a more “golden” nuance. The grape and the wines content becomes more ripe and the gets a deeper character, also called “bouquet”.
When red wines ripen its colour transforms from the blue red colour to a more “brick” red nuance. The young aroma from the tannins becomes more rounded and ripened bouquet by for example oak, leather and decayed leafs.
